Broccoli, Kale Salad
Charred Broccoli, Kale, Feta & Pistachio Salad
2 broccoli heads
2-3 kale leaves stem removed
1 red onion finely sliced
100g feta (I like Goat feta)
2 lemons
¼ c mint leaves chopped
handful of pistachios
½ c extra virgin olive oil
2-3T red wine vinegar
1 garlic clove finely chopped
Salt and pepper
Cut broccoli heads lengthways through the middle of the stem in thick slices.
Cut cheeks off the lemons.
Chargrill broccoli and lemons on a BBQ or griddle pan for about 6mins till nice and charred and lemons are soft.
Roll up kale leaves (stem removed) and finely slice and place in a bowl with red onions and feta either crumbled through or chopped into small squares.
Chop up finely another charred lemon half and add to your salad.
Dressing:
Juice one of your lemon halves into a bowl and add olive oil, garlic and red wine vinegar and whisk together. Season with salt and pepper.
Add some dressing to your bowl of salad.
To serve place broccoli onto your plate add some dressing and top with your kale salad.
Cut pistachios in half and use to garnish on top with a charred lemon cheek on the side.
