Fried Wonton
Pork, Prawn & Coriander Wontons
40-50 Wonton square wrappers (these can be found in a Chinese grocer)
Filling:
300g Pork mince
150g Prawns chopped roughly (leave a bit chunky as you want to be able to taste them)
1T cornflour
a good handful of coriander finely chopped
1 spring onion finely chopped (optional)
3 T Soy sauce
1 T sesame oil
white pepper and salt
Vegetable or Canola oil for Deep frying
Sauce:
Sweet Chilli Sauce or Sweet and Sour Sauce
Mix up the filling ingredients.
Lay out your wonton wrappers and put a good heaped teaspoon of mix into the middle.
Wet edges and place another wrapper over the top.
Pat down firmly all the edges squeezing out all the air bubbles around your filling.
You want to make sure all the air is out of your little wonton parcel otherwise it can expand and burst in the oil.
Alternatively you can make these smaller with 1 wrapper and fold them into a tortellini or dumpling shape.
My kids like the crunchy outer pastry so I like them big and square.
Heat up your oil into a wok or deep pot to 165˙c and fry 2-3 at a time for about 5mins.
Rotate and turn them over until nice and golden then drain on some kitchen paper towels.
Serve with your preferred dipping sauce.
Also goes well with some Kewpie Mayonnaise.
Makes about 20 – 25 large square ones or 30-40 smaller ones
