Potato Salad with Dill, Capers& Gherkins
POTATO SALAD WITH CAPERS, DILL & GHERKINS
1kg small gourmet baby potatoes cut in half
2T Mayonnaise (Bestfoods brand)
1T Extra Virgin Olive Oil
½ juice lemon
2t Wholegrain Mustard
3T Capers
4 medium Gherkins finely chopped
Bunch Dill
1 small Red Onion finely sliced
Salt & Pepper
Boil potatoes and cook till a pairing knife can go through them and leave to cool.
Place finely sliced onions in a bowl of water for 10mins then discard water. This will reduce some of the sharpness.
In a small bowl mix up mayonnaise, extra virgin olive oil, mustard and lemon juice.
Add potatoes, red onion, capers, gherkins into a serving bowl and mix through the dressing and the dill leaves.
Season with salt and pepper.
